The early morning video shows that the third egg (even if behind the fish to start with) is in the nest.

What happened then since we see only two osprey chicks in the nest?

We can only imagine the whole event. At the end of the video it can be seen that female Irma sits down to warm the chicks and incubate the egg, but under her is also the fish used for food. Fish slime is known to work as glue and quite probably when the male came to the nest and let the female get out to stretch her legs she left the nest with the egg glued to her belly feathers.
