…but what gastronomic delights it can offer, freshly prepared.
Obviously one of the most sought-after edible mushrooms and there are some in the Estonians forests. Despite the rains not particularly massively but then last year they were picked by wheelbarrow loads …
It is worthwhile looking for ceps in conifer as well as mixed forests, and the mushroom may be quite large and well-fleshed. The cap yellowish to dark brown, and seems a little ”burnt” at the edge. On the top part of the thick pale brown stem often a delicate mesh pattern of white veins. The pores on the underside of the cap are white on young ceps-to-be, yellowing with age and olive green on old specimens, but these are not worth picking. The white flesh will not change colour at the cut, the smell is pleasant and the taste you will praise at the dinner table.
