The warm weather that turned the grass green overnight has also brought our native vitamin bomb to life – the ground elder. Towards summer ground elder (Aegopodium podagraria) is a nuisance for weeders and it is not allowed to become a full-grown plant, but in early spring it is a symbol of the freshness and power of new life – for animals as for insects and others. Look for ground elder in fresh grass, when it is small it keeps the leaflets of its triternate compound leaf quite tightly folded. And then – into your mouth!
