Chanterelles grow most often in conifer or mixed forests. They are able to develop a mycorrhiza with many kinds of trees such as spruce, pine or oak. Chanterelles prefer growing in moist moss or grass, thus finding the first mushroom isn’t easy – the following ones come easier.
The raw mushroom has a somewhat bitter taste and a special smell, and this makes the chanterelle extremely “maggot-proof“. Probably the chanterelles contain substances that are unpleasant for the mushroom maggots but harmless for humans.
